I looked into going to New Zealand recently, and there are lost of things to do like swimming with doplhins, sailing etc. They also have a excellent range of organic food, however they are very big dairy lovers, they put dairy in everything. In all the major cities though you can find veg restaurants which serve vegan meals check out the follwowing website: http://vegsoc.wellington.net.nz/.
As for Australia that where i live, i am yet to travel interstate as a vegan. However, i can tell you there are plently of veg resturants in melbourne for you to eat at I recommend smith street in collingwood and brusnwick street in fitzroy.
