From a VegSource friend who visited NZ:
There's a really cool cafe in Mt Maunganui (by Tauranga in the Bay of Plenty) if you're up that way called Zuchini cafe. It's all vegan. If you're down Dunedin way Arc cafe is pretty cool - it's vegetarian with vegan meals marked. Most cafes in Wellington are pretty vegan friendly - I particularly like Midnight Espresso
Most of the asian food you have to be really clear about everything you don't want - a lot of 'vegetarian' dishes have chicken stock or fish sauce. Japanese places are pretty good. I've found turkish food the best cheap option for eating out.

You also might want to post on the Pub board to a lady named Jess(NZ). She knows the
vegandining situation well in that country.

Fiji and Vanuatu are unknowns.
