Subject: Cruise Line that will cater to vegan?

We would like to take a cruise but have had a previous disasterous experience .. all too willing to accommodate the vegan but in actuality hadn't a clue as to what it is! Everything cooked in chicken broth, etc. We don't want to sign up and be disappointed again .. if anyone has had a good experience, I would like to know the cruise line. Thanks.
