In the Morocco FAQ linked, I do have a few alternative restaurants scattered across the country, where you might have a better selection.

I don't like to have to say this, since Morocco is a fabulous country, with amazing natural and built environment; it is, however, on the wrong side of Suez, which divides Arabia Hummosia from Arabia Nonhummosia. If you're keen, pack some of your own essentials, and perhaps rent a house - there's a veggie-friendly one for hire in Taroundannt in the South."
