Very good question. I had the same problem for about a year.

You need to include whole grains into your diet. Have oatmeal, brown rice, quinoa (boil till soft), even millet (boil for awhile till soft).

You could use to include some saturated fats like mayonnaise. I know its not the greatest, but it will help you gain.

Use these oils till you gain weight: quality Safflower oil -rich in omega 6, quality soy oil - rich in omega 6. After you gain weight and get stablized, reduce these some, and go back to omega 9 and 3.
