SAD means Standard American Diet. Which is highly processed foods, 30-40 percent fat, includes meat and dairy. A "diet" which is SAD would be a reduced calorie version of the regular standard American diet. That is, it would include meat and dairy products so cannot possibly be lower than around 20% fat even at a calorie-restricted level. This is a "diet", and once one goes away from it but continues to eat the SAD way, will mostly likely gain the weight back that was lost on the calorie-restricted diet. A better option is to change your eating habits completely for a lifetime to a healthy diet which includes no meat and dairy, only whole mostly minimally and unprocessed plant products. You do not need to be "careful" about getting nutrients on this diet, a plant based diet including lots of vegetables, fruit, whole grains and legumes (beans) will more than meet dietary requirements for everything you need, including protein. Keep vegetable oils and high fat plant foods to a minimum. Check out McDougall program, do lots of reading. Even B-12 is available from plant foods, from fortified nutritional yeast and other products -- soy and almond "milks," cereals, etc. You can take a supplement every so often if you are concerned about B-12.
