No, you don't need dairy to gain weight. (The dairy industry is trying to push it for weigh loss!) What exactly are you eating? How many calories a day? If your nutritionist wants you eating ice cream and milk shakes, there are some excellent soy ice creams out there...some rather high calorie. But if you are in recovery from an eating disorder, you may be resisting consuming fatty high caloric foods. You may be under estimating what you are eating. Are you exercising to keep fit as you gain weight...and are you adding the appropriate number of calories to compensate for that?
It is best if you just eat a real good balance of healthy (Vegan!) food, being sure you are getting enough calories to met you daily needs plus a little for weight gain. You are gaining a little to slow, but you also don't need to put on all the missing weight in on month. Then you may panic and defeat yourself, too.
Find out how many calories a day you need to met reasonable goals. Some find it works to have a calorie range to stay between. Healthy food in health portions. Spreading the consumption of the food over the day in smaller portions in stead of three meals a day may be quite helpful.
