That is interesting and a good question. I read that shiitake mushrooms have a lot of vit D. See Dr Harris' nutrition spreadsheet. A moderate portion of mushrooms has more vit than the rda, but you have to eat them raw. As far a exposing them to light, mushrooms can easily be grown in a culture medium in a pan. Shiitake mushrooms are grown on rotting hardwood (the mushrooms contribute to the rotting).

As far as dark skin pigmentation and vit D, my understanding is that you can still get vit D from the sun - you just need quite a lot more exposure than a light-skinned person.
