Can you, or the two of you, help her to "get it"? It does sound like an issue of (mis)understanding, since she is willing to make special meals for you. She is making an effort.

For many people who have lived their whole lives not knowing or caring where their food comes from, it is a big change in the way they think. There is a lot of new information to process. They often don't even know what questions to ask or where to go to get the information.

I think it is the responsibility of the vegan to help others who are willing to make an effort to get it. Maybe offer to plan and cook a meal together, so she understands how you decide what ingredients to include.
