Subject: Of Sugar and Spice and Everything Nice

I am a relatively new vegan. I was only vegetarian for three weeks for taking what I saw as the next logical step. I am absorbed information from every book, cookbook and website this side of the West Coast so I feel I am well informed. However I would like the opion of my fellow vegans and vegetarians on this matter. I have eliminated caffeine from my diet, go gluten free whenever possible by buying some food products that are gluten free, and for a while i had elimintaed as much dietary sugar as possible. I kicked the high fructose corn habit and all it's guises. I eat healthy on a day to day basis but I am torn as to whether or not i need to eact so strictly. A vegan diet is already low in fat, saturated fat, contains no cholesterol, not to mention a ton of other things. My question is is there really any need to eliminate sugar (i use raw turbunado sugar, sometimes agave), or wheat gluten or any reason to go low fat with anything? Do you follow any specific eating pattern or do you just eat a variety of foods? Lastly desert. My favorite. Before becoming vegan I was a chocoholic in the worst way. Now as a vegan I'm using vegan chocolate chips but mostly fair trade cocoa powder to give me that chocolate taste. I don't eat much as is so I always try to include some type of desert at the end of the night. Do you eat desert everynight or do you beleive that it should be an occasional indulgence? I always take care not to indulge in anything overly rich and sweet. I usually will have a soy ice cream sandwich, a handful of cookies, a cupcake or something else that I've baked myself.
