Subject: Vegan on a college student budget?

Hi! I was vegan a few years back and loved it, but it was hard to maintain at my boarding school and when I travelled abroad. It's been a few years now and I'm currently ovo-lacto and also eat some seafood (I live on the coast so it's all local wild caught) but I felt healthier than ever as a vegan so I'm looking to move back towards a vegan diet. I'm hoping to drop a few pounds too, but mostly looking for better overall health and increased energy. But the subject line basically says it all. I am on a tight budget as a college student and don't have tons of time either. I do have a kitchen and a health food store close, so I'm looking for ideas for cheap, quick meals. I can also commit more time on weekends to making big batches of things to freeze and eat during the week. Any suggestions would be much appreciated! Thanks!
