I had a similar experience when I first became vegan as well. I attribute it to my lack of knowledge on what I was safe to eat. Not being knowledgable enough, I ate mainly refined sugars such as pastas and rice and fried tofu dishes to fill me up and actually gained weight. Perhaps you need to add fats into your diet? I have learned to carry food with me such as nuts (almonds are great!) so I'm not stranded without healthy food options which holds me over until my next meal because of the fats in it. Cutting back on sweets and switching over to healthier fruits instead helps fill you up too.
