One thing you might do is check out some of the vegetarian and vegan options to things like chik*n nuggets -- some of them are really good and I have found even omni kids that come over to visit love them -- although not the healthiest, it gets them going in the right direction. It takes time for tastes to change and perhaps doing vegetarian AND super-healthy is too much all at once.

As for your husband, you do have to have respect for his choices if you expect him to have respect for yours, that doesn't mean you don't state your opinion and the line over which you are not willing to cross (for me it's having any meat in the house at all, once every six months or so I make him a fish dish because he is starting to eat and try much more of what he calls "my" food). I also print out quotes and cartoons on vegetarianism and put them on my fridge, I change them regularly. I'm assuming he reads them and the high-minded philosophy that animals are not ours to use is slowly dawning on him. It just takes a lot of time and gentle educating.
