I am not a parent myself, so take my opinion with a grain of salt. However, I think it is a parent's job to impose their beliefs and diet on their children. That's how kids learn, and how you ensure that they learn the right stuff.

However, before you can do that, you and your husband need to discuss and agree on what you are going to teach your children. It doesn't matter to me or anyone else what you teach them, and the two of you could even teach them different things, as long as you both agree that that is how you are going to do it. If parents are not on the same page, you get kids who are confused.

So, my advice would be to not worry about the kids yet, and focus your attention to talking to your husband. Work out and agree on a plan for teaching your kids about food and values (any anything else): what you are going to teach them, when, by whom, etc. Then, once you agree on a plan, both of you put it into effect, presenting a unified face to them.
