I am sure you probably already know this, but it bears repeating for others reading the thread... Never accept an invitation without telling your hosts what you can or can't eat. It is not fair to them to show up and then reject the food they serve. It least by warning them, you give them a fair chance to accommodate you.

Remember that your hosts want you to eat there or they wouldn't have invited you. So it is in their interest to serve you something that you can eat. It is not an imposition to give them suggestions as to what you can eat and would enjoy. By all means give them more than one suggestion, so that they can choose something to make that they also will enjoy.

As Leslie has already suggested, it never hurts to offer to bring something.

Here's one way the conversation might go:

"Thank you! I'd love to come.
"By the way, I'm vegan. That means I don't eat meat, eggs or dairy. Is that going to be all right with you? I can bring a dish if it would make it easier for you."

Then, you can take it from there, elaborate on what you can or can't eat ("That's right, no cheese either"), suggest a few alternatives they can make, etc.
