Remember -- there is nothing animal based that there isn't a better alternative for. Try this:

Agave syrup (from a cactus, looks & tastes just like honey)
Rice syrup -- low glycemic index, mild and mellow, golden color and mild flavor
Barley malt, dark sweetener, heavier in texture and flavor, these three sweeteners are all, I believe, OK for diabetics and healthier than sugar.

For baking, you can use sucanat, beet sugar (make sure it's beet and not cane, cane sugar is often processed with bone char), molasses.
