If you eat a completely plant based diet consisting of beans, whole grains, vegetables and fruits, you quite honestly can't beat it for nutrition. It is so absurd that people who are uninformed about true nutrition will tell you that a vegan diet is unhealthy while they are consuming large amounts of animal products with lots of saturated fats, no fiber, not to mention antibiotics.

You should find lots of information on this subject here, also try the American Dietetic Association and their position on vegetarian and vegan diets, they have a wonderful booklet on this subject covering every possible nutrient which is great to give to people. It's real researched information, not just someone's opinion.

As Zorba Pasteur says (from NPR Zorba on Your Health, and I don't necessarily agree with everything he says, but this I do) when someone tells you something like this, ask them "where's the data?, show me the proof." The proof is sound that a well-planned vegan diet is far superior to the standard American diet, and those who tell you differently are simply following the conditioning they've received from childhood which is, quite frankly, mostly wrong.
