Probably heart disease is the first one that comes to mind, although you might want to distinguish in your paper the differences between vegetarian and vegan. For the reason that the disease prevention gets better the closer one gets to a vegan diet; a lot of vegetarians simply replace meat with fatty cheeses and dairy products, thus not gaining anything in the way of preventing arterial plaque.

There is a plethora of information available on this, check the ADA website for their position on vegetarianism, you certainly shouldn't have any problems backing up your thesis.

After heart disease I'd say diabetes, cancer, osteoporosis, even multiple sclerosis can be slowed or stopped by proper supplements and plant based diet if it is begun early enough.
