add nuts, seeds and oils. They are very high in calories and make great sauces for the beans and rice. Nut sauces are to die for!! Add juices and dried fruits too!! I don't think being vegan has to impact ones weight. I maintained on a cooked vegan diet no problem.........and I am easy to lose!! Add some rice pastas too. Pasta is easy to digest.
