"Raw" cashews aren't technically raw (as you correctly noted). They're
simply referred to that way to differentiate them from roasted cashews.
So don't be concerned that they aren't labeled this way. There's probably
no benefit to using cashew nuts instead of cashew butter. Sometimes the
butter is much more expensive and more difficult to find, which is I why
I don't call for it. But you can use whichever you prefer or have the
easiest access to.

Pimientos are simply a type of sweet red pepper that's typically sold in
jars in the United States. Feel free to use roasted (and peeled) sweet
red peppers (or red bell peppers) -- they'll work beautifully. Just be
sure to blend them thoroughly so no tiny bits can be seen in the finished
product.

A slightly flexible plastic container will make it easier to remove the
uncheese. It's actually fun to look for different sizes and shapes of
containers to use -- you can be as creative with those as you like.
