Soaking doesn't have anything to do with the safety of the beans. It only
adds moisture to them so they don't need to cook as long and get tender
more easily. Also, some people report that soaking makes the beans more
digestible (if you drain off the soak water and add fresh water to cook the
beans). In terms of food safety, most beans should be fine cooked in a slow
cooker, as long as they reach a simmer and are cooked thoroughly.
