Traveling is generally not that difficult in terms of finding vegan food. Many restaurants offer baked potatoes and salad or even salad bars where there's lots to be found. Pasta with stir-fried veggies is an easy dish that nearly all standard restaurants can make (or already have on the menu). Ethnic restaurants (Mexican, Thai, Indian, etc.) have plenty of options -- you just need to inquire about specific ingredients to ensure that what you get is vegan. Breakfast is easy -- most restaurants (and even Starbucks) have oatmeal, and there are plenty of other options. If a natural food store is around, stock up on a few hearty items. If your hotel room has a refrigerator, you're all set. Hummus and pita bread or crackers and some baby carrots can make a handy (and tasty) meal in a pinch. Really, there are plenty of options, and there's likely a veg or veg-friendly restaurant in the area, so you probably don't have to do that much planning on your own.
