Subject: How to Maintain a Vegan Diet While Traveling?

Having been told by my current employer that I'll be laid off in May due to statewide budget cuts, I have a line on a teaching job in Pennsylvania. I know that I could probably find a another job as a Culinary Arts teacher in Arizona but quite frankly, the pay is horrible and there's no longer any job security in being a teacher. This will have been the 2nd time I've been laid off in four years due to budget cuts.

If I pass the initial screening, interviewing for this job will require me to fly into Harrisburg. I've no doubt that I can google a vegan restaurant in Harrisburg ... but if I get the job and have to relocate, what will I eat when I'm on the road?

Most fast food places and diners are not vegan friendly. What do the rest of you do when you're on a long road trip? There has to be something better than an ice chest packed with soy milk and a supply of nuts, dried fruit, and vegan jerky.
