You can make the Red Cabbage and Apples without the apples, if you like. I'd make the original version (without the onion) first and see how you like it. You can always make it another time with the onion if, after you taste it without the onion, you think that's how the Oktoberfest red cabbage was made. The recipe was meant to be played around with to suit your tastes. So try it as written (but without the apples, if you prefer), and then try the variations. Enjoy!
