So I thought I'd post an update on this since it might help others to make decisions about their own situations.

It has been two months or so since this all began, we have had people here steadily for that amount of time. I have let everyone know what the "rules" are -- the only animal products allowed in the house are some canned items, soups, a few frozen things. Other than those items everyone here has pretty much been eating "my" food. Which means I have had the opportunity to introduce a new way of eating to people who otherwise would probably not have experimented with it. We have had wonderful dinners, and my sis in law even asked me to show her how to use tofu, we made Bryanna's breast of tofu with roasted veggies and it was delicious! My brother in law has stayed with us most of the time and I think he has finally let his guard down, that eating here doesn't mean yukky weird food, he so far has gobbled up everything I've made, biscuits & gravy, mac and cheeze sauce as a fondue and over potatoes, steamed vegetables, soups, I mean literally gobbled it up. Made a few comments like "this doesn't seem vegan, it's so rich and smooth," referring to a carob pudding we had for dessert the other night. So my thought is, you can compromise a bit, stick to your values a lot, make delicious food and show people that plant based eating can be delicious at the same time. It turned out to be an opportunity to help others.
