I'm sorry you and your husband are having such a difficult time in your lives. My heart goes out to you! You are very fortunate that his family is willing to help out, even if their lifestyle and eating habits clash with yours and your family's.

My suggestion is to welcome them into your home and gently explain your quandary. I think setting aside some space in the refrigerator is a very good idea. If you can't stand the thought of them using your cookware to cook animal products, perhaps you could purchase a few pots and pans (and a cutting board and knife) just for them and keep them in a place where they're easily accessible.

While going to restaurants is always an option, it's really an unfair and expensive one on a regular basis. Everyone will need to make some compromises in this tough situation. If staying with you is where they need to be to help with your husband, then I'd say that's a big compromise on their part. Perhaps you could meet them halfway, which would mean tolerating something you wouldn't normally tolerate in your house.
