I'm not a vegan, though I have embraced a vegan diet through the end of July. I am a chef instructor. Before I can offer constructive advice, I need to know more about your allergy. When you say "nut allergy," are you talking about peanuts? Peanuts are a type of legume. Do you also have allergies to beans, peas, lentils, and chickpeas? Statistically, most people who are allergic to peanuts are not allergic to other legumes. Are you also allergic to tree nuts? This would include walnuts, pecans, almonds, pine nuts, cashews, and coconuts among others. Knowing more about your allergy would certainly help. Offhand, I would recommend eating various seeds to replace nuts. Sunflower, pumpkin, flax, and sesame seeds typically provide acceptable replacements for peanuts or tree nuts. They also provide similar nutrients and taste.
