Hello All! My name is David. I'm the chef instructor of a Culinary Arts program at a small rural high school in Arizona. I have a pen pal who is a lacto ovo vegetarian. Since her diet includes a lot of cheese, some of which contain more saturated fats than lean meats, I began creating vegan friendly recipes. I decided to create vegan rather than vegetarian recipes since as a chef, I enjoyed the challenge of working with textured vegetable proteins, soy cheese, and natural sweeteners. As part of my initial background research on veganism, I watched a documentary, Vegucated. The premise of this film was simple. Could a vegan film editor introduce 3 non-vegans in New York City to embrace a vegan diet for 30 days? Instead of simply forcing these people to use a vegan diet, the editor introduced them to a doctor who gave them a physical as well as a talk about the health benefits of vegan cuisine. They subsequently went on a tour of local supermarkets and health food stores to find vegan friendly alternatives to dairy and meat products. On later field trips, they visited organic farms as well as a huge corporate farm where 10,000 chickens were crammed together a poultry barn. The film was eye opening to say the least ... and although I'm not sure if I actually want to be a vegan or a vegetarian, I have decided to emulate the volunteers in the film and have embraced a vegan diet for a little over one month. I have now been enjoying vegan cuisine for a week and will be continuing this project through the end of July. A couple of benefits have already occurred. I've lost 1 pound over the period of a week. I've also begun producing some really neat vegan recipes and have been having a lot of fun in the kitchen. P.S.
