I made one of Jo's block uncheeses recently. The gouda! Yum! And then all I could think about was...panini! Now, I've never had a panini in my life. So no good reason for the obsession, but it was really on my mind, every day for about a week. When our new gluten free sourdough bread came, I HAD to figure out how to get a panini. One day I'm sitting there pricing panini makers online(yikes, expensive!), when I thought, "you know, that's not too different from a waffle iron." Ding, ding, ding! I have a waffle iron! Sooo, I made an heirloom tomato, mayo(homemade vegan dill mayo) and cheeze sammich that was ASTONISHING! And then I made another one. :-) I've seen pics of panini, and honestly, I think that the waffle iron probably works better. Lots of toasty nooks and crannies! Anyway, just dropping in to say hello and rave about my sandwich(panaffle? wanini?)! :-)
