Well, oxalic acid binds minerals (such as iron and calcium) and cooking and other techniques can help release them. So although certain plant foods (like spinach) are rich in minerals, some are less so for these reasons. Better choices for mineral absorption are kale and collard greens over spinach. But it's a good idea to rotate vegetables, since they all offer something unique.
