Hi Joanne! :) Thanks for the reply. So when something says "spinach is a good source of iron" it's really sort of a nonsense phrase? (Whole grains and tofu are supposed to be good sources as well, but if they inhibit the body's absorption of it, is there any point in claiming the benefits of iron? It's mind-boggling!) I know we'll have to do more than not eat bread if I'm really trying to go gluten-free and "test" my hypothesis, but until October starts and the official school year kicks in I'm sort of on my own figuring these things out.

Just an fyi, when you "season" a cast-iron skillet it involves rubbing oil in the pan when you're done. Not so much the good ol' garlic and paprika routine, but more a coat of some sort of fat to keep the pan in good working order.

And, LOL, I totally agree with you about getting another copy of RVC. I had it in the pile to pack, but only "Saucy Vegetarian" made it in! Oh, the hardships of international packing!
