Hi, Amelia. I'm sorry you and your daughter are going through these challenges. Going gluten-free is complex -- there really is quite a lot to it beyond just avoiding bread. And, yes, the iron in spinach is bound by oxalic acid (the same with chard and whole grains). The cast-iron skillet is a good idea. I wouldn't worry too much about the seasonings -- that seems less important than other issues right now. You can always add the seasonings after the food has been cooked in the skillet.

If at all possible, I suggest consulting with a dietitian familiar with (and supportive of) vegan diets who can help you and your daughter design an age-appropriate diet plan that will work for her special needs and tastes and provide the nutrition she requires. I'd also suggest purchasing another copy of Raising Vegetarian Children, so you can have it handy. :-)
