I personally think people are all on a journey and just because someone is not veg doesn't mean you can't have some gentle influence on them and make it work. My daughter's boyfriend, for example, decided all by himself to become vegan after hanging out with her and her sister and husband. My other daughter, same thing, her guy became veg after he was enlightened by her. And if they don't, you can still make some difference, my husband quit eating a lot of animal foods after he met me and started eating vegetables he has literally never eaten in his life. Which is baffling to me, how could you go through 40 years without ever eating a vegetable? Sad. Anyway, acceptance is all part of the vegan experience, IMHO. I know there are those who won't date someone who isn't veg, but just think of the missed opportunity for gentle influence. My veganism has, without preaching, only example, influenced many, many other people in my life and if I had cut them off to begin with, that influence wouldn't have taken root.
