Almost any of the salads and spreads from Vegan Deli would be good choices for what you have in mind (and, of course, Chickea, Walnuts, and Tomato salad would be one of my top selections too! lol!). Bean salads, raw and cooked veggie salads, lettuce combos (with dressings from Saucy on the side), potato or rice or pasta salads would be excellent as well. Is this someone who lives near you or will you actually be mailing the food to her? ~Jo
