I second Jo's advice, but would add that her book "The Saucy Vegetarian" is a GREAT resource for inexpensive ways to sauce up beans/rice/veggies. I also really like Jeff Novick's Facebook page(link below). In his "photos" he has pics and recipes for a lot of easy, healthy, cheap vegan meals. He's all about making healthy eating accessible to everyone.
