Most of my cookbooks do NOT include the nutritional information, but if I want that info, I google sparkpeople recipe calculator and type in each ingredient and then how many servings and it will give you nutrition info. My favorite cookbooks: Vegan with a Vengeance (great pancake recipes and fun to read) Vegan Cupcakes Take over the World Vegan Cookies invade your Cookie Jar (I make all my christmas cookies from this now, the chocolate chip tastes just like Toll house, but you can lick the dough. And my favorite, Cherry almond cookies, yummy) Veganomicon (Teaches how to cook a vegetable, a MUST have for every vegan kitchen) All of these are by Isa chandra Moscovitz and Terry Hope Romero and are available on amazon. Two of them were available at my library system for me to try first. I also love Vegan on the Cheap(Great ways to make your own. A wonderful recipe using Seitan, beans, soy sauce and nutritional yeast to make your own deli slices that my kids love) and Vegan Planet by Robin Robertson The Candle Cafe Cookbook is also really good for gourmet options I have Table for Two and the Ultimate Uncheese Cookbook by Joanne Stepaniak Two more favorites: The Mediterranean Vegan Kitchen by Donna Klein (wonderful salad and dressing recipes and the best minestrone soup I've ever made and The Vegan Family by Chefe Brian P McCarthy (Who has a couple you tube videos with demos of some of the recipes.
