hey Sonja, I was trying to post a reply but apparently you are not allowed to put websites on your post so I ended up erasing half of my message! Anyway, I'll try again: I would suggest googling recipe websites, there are a couple that have only vegan recipes, but some of the regular ones have a vegan search option. Perhaps some things that you are eating can be converted to vegan versions. Peta has a pdf of a 2 week menu plan that has some terrific recipes, such as a wonderful brownie recipe and a delicious enchilada bake that even my picky husband will eat. I would post the link, but apparently, I am not allowed LOL. Anyway, some of my favorite family pleasers are Seitan Stew (I make simple seitan using vital wheat gluten, and brown it and stick it in the crock pot with potatoes, carrots, etc and some veg broth which makes a nice gravy in the crock pot. I will also make quesadillas (sans the cheese) using refried beans, that I cook nice and crisp in my cast iron pan, then cut using a pizza wheel and serve with a dollop of salsa and a sprinkling of scallions. also, you can borrow cookbooks from the library and then copy the recipes down until you have the funds to buy them.
