Sorry to get back to you so late, Becky! Covering the seitan with liquid will keep it from drying out. That's the main reason to do so -- to keep it moist and juicy. You can cover it with broth or a mix of water and tamari (though that might make it too salty). If you don't want to do either of these, just cover it tightly and it should be fine just fine.
