Congratulations on your new lifestyle. The simplest way to ensure you get all the necessary nutrients is to rely on the four food groups. Not the official ones, obviously, but these: grains, legumes, fruits, vegetables. (Vegetables being any plant-based food that is not a grain, legume or fruit, especially leafy greens and other veggies with lots of colour.) If you eat regularly from all four groups, then the only thing you might need to supplement would be vitamin B12. Vitamin B12 can be obtained from nutritional yeast, or in pill form.
