Subject: No salt in GF banana bread?

Hi Jo, it's me again. I figured I would post this question seperately. I want to make your gluten free banana bread, from your Allergy Survival Guide book, for a friend of mine that has celiac. The thing is she doesn't use salt, even in baked goods. She also doesn't eat sugar but that is no problem I have made the same recipe with stevia just fine.
I am figuring the salt helps it rise a little as well as excentuates the sweetness.
I was wondering if it is possible to successfully make it without salt? Now that I think of it the baking powder alone might work and no salt just might make it more bland?

If it is truly necessary do you know of an alternative to use?
