So for those of you with husbands and kids who won't try "your food" (I really hate that term but my husband uses it, effectively creating an invisible line between veg food and non-veg food) anyway, try this. I made this for my husband a couple of nights ago and he flipped for it!

New product called Gardein protein, you can google it and I buy it at Pilgrim's -- the "chik'n scallopini." Brown the cutlets first in some kind of oil, I use grapeseed because of it's high flashpoint. Remove to a plate, then put in your pan vegetable broth (I use Better than Buillon no-chicken broth), wine, (I don't measure, just guess) - sliced mushrooms, and capers. Reduce somewhat until it's kind of thick and saucey. Then add a bit of lemon juice and the cutlets back to the pan. Super easy. Put a salad with it, steamed vegetable (I used asparagus) - potatoes. He LOVED it and he's really really picky.

My daughter and I like to too but we feel a bit weird as it is so . . . realistic . . . . but rest assured completely vegan. I think if you served this to company they wouldn't know the difference and would love it, except all my relatives know I would never cook with animal products.

Anyway, if you have a resistant relative, TRY THIS! It's super easy and super yummy.
