I am not a dietitian, Eran, so I cannot tell you what would be best for your particular nutritional needs. However, I have read that soaking and sprouting can indeed help eliminate or reduce some nutrient inhibitors (depending on the food), so it is certainly worth trying. I feel that using what is grown locally and/or regionally is always the smartest way to go (from both a health and environmental perspective), so use what is readily available to you, but alternate among foods as much as you can so that you are not eating the exact same foods every day or for several meals in a row. Try to include a range of colors in your meals as well (some people call it "eating the rainbow"). It sounds like you already have an excellent diet and just need to make minor tweaks as you strive for the optimum. ~Jo
