Hi, Ted! I like the vital wheat gluten (instant gluten flour) from Frankferd Farms (see link below). I have only tried a few others, but I discovered that there is a wide range of quality. There are many brands to try from these days. Why not purchase a few different ones and see if you can tell the difference in the results. That way, you can find the brand that suits your tastes best.
