.....turned into a cake - well really a loaf. Thank you for the advice. I doubled the recipe and I baked it in a 5x9 inch loaf tin for 40 minutes. It came out perfectly. Actually, I must confess I added pie apple pieces too (I got a bit carried away because I had to make the apple sauce from scratch). Once it was cooled, I sliced it into 9 reasonably thick pieces, so that each serve became about 1 and 1 half times the muffin serving sizes - it was double the original servings of 6 muffins. My husband ate 3 slices! It was still the right texture not dry nor too moist. It was perfect. So, thank you for your help with adapting it and of course for the original in Vegan Vittles.
