The Vegan Deli is a great book for that. The book has recipes that take time or no time at all. I love the freshness of this book. I have been cooking alot lately. I cooked quark screw pasta the other day put zesty Italian bottled dressing and 2 table spoons of tahini after mixing those i added fresh parsley cherry tomatos from the garden and green olives. I ate it along side a grilled tofu sandwhich but u could make a complete meal of it by adding garbonzo beans.
