Grilling veggies is fun and tasty and leftovers make GREAT lunches!!

I would get some aluminum foil and a veggie grilling basket.

Asparagus is super tasty grilled - just lay it on after putting a touch of olive oil and lemon juice on it. Or you can wrap it in foil and grill. Grilled corn is my favorite. Soak the corn, remove the silk, and grill turning often. YUM. Peppers and mushrooms grill super easy - lay them down or again, use foil. Potatoes need to be small or cut up but are good plain or with seasonings.

Tofu needs to be baked first IMO but I like well cooked tofu - not mushy stuff.

I think you can grill about any veggie (havent tried carrots I guess) as long as you watch the heat level (I keep mine medium low or use a higher rack) and use foil or a basket/screen so they dont fall thru.
