Hello, Ginger. The Carrot Butter should be VERY thick, not runny. Did you add the cooking liquid? The carrots should be thoroughly drained, as explained in the recipe, and a VERY SMALL AMOUNT of the cooking liquid should ONLY be added if absolutely necessary to facilitate processing and achieve a spreadable consistency. As noted in the recipe, the mixture should be very thick and creamy, not watery. If it was, then you either didn't drain the carrots, added all of the cooking liquid, or added too much of the cooking liquid.

If you have Vegan Vittles: Second Helpings, there is an updated version of the recipe in there along with several variations that you might enjoy. This is the only butter recipe I have. I do not use saturated fats like palm oil or coconut oil or similar products in any of my recipes, and although you could probably make a margarine similar to the vegan products on the market by using these ingredients, it is not something I would do. With the Carrot Butter you get excellent nutrition along with a delicious spread.
