Hi, Ginny. My coauthor of Raising Vegetarian Children is a registered dietitian. As I am not, I steer clear of giving nutritional advice, so I cannot answer your questions about whether it is okay to add flaxseed oil to your youngest child's diet.

If you are purchasing flaxseed oil in vegetable gel caplets, you should not have to refrigerate them; but they will having a longer shelf life if you do. The refrigerated oil, in dark glass bottles with an expiration date, is probably the best to buy and likely the freshest.
