I looked up calories for potatoes and for ground beef. This information may not be completely accurate because different sites tend to be incosistent in the calorie information they give for the same food items. Neverheless, I decided to use information from the same site and calculate the calories for 100g of each (the information posted for each was in different weights and extrapolationg to 100g was easiest). I got that beef has roughly 3.65 times the calories as potatoes for the same weight. Using the numbers that Keith gave, I then determined that calorie for calorie beef requires about 16 times the greenhouse emissions as potatoes. Pretty strong argument for veganism. I actually expected the number to be larger, but it is still quite considerable.
