Subject: An experiment with one of Jo's recipes

I've eaten some delicious packaged dehydrated vegan raw kale chips. My favorite flavor is the "QUITE CHEESEY" with the following ingredients. Kale*, Cashews*, Red Bell Pepper*, Lemon*, Nutritional Yeast, Himalayan Crystal Salt. But at $7.00 for a 4 ounce bag, I thought I'd try to make my own.

I bought a bunch of dino kale, washed it, dried it, removed the center rib, then cut it in 2" pieces. For the sauce, I used Jo's Cashew "Cheese" Sauce on p. 70 of "The Saucy Vegetarian." I doubled the recipe and instead of onion powder, substituted 1 TBSP of chopped red bell pepper. Instead of all miso or all salt, I used both (in 50% proportions).

I coated the kale with the sauce, and laid it out on the dehydrator on paraflex sheets, until the chips were dry enough where I could remove the paraflex and dry directly on the screens.

Result: My cheesey kale chips were every bit as delicious as the packaged, if not more so! And a lot less expensive to make. :-)
